These Hocho style blades are approximately 1 1/2" wide and 1.5mm thick. They are skillfully flat ground from top to bottom and then honed to a very thin, astonishingly sharp edge. Combined with the continuous curve on the blade and wide thin cross section, you have a blade that's unparalleled for cutting and shearing power. Now you can slice tomatoes wafer thin and cut through vegetables and meat with virtually no resistance.

These knives are available with either a serrated edge or our new plain edge style. For maximum control we've made the handles out of heavily contoured and deeply checkered Kraton.
